Some of my Favorite Recipes...

Shrimp & Orzo Pasta Salad

Ingredients:
Salt and pepper
½ c. fresh lemon juice
1 c. flat leaf parsley, chopped
½ c. small diced red onion
1 cucumber, thinly sliced
    (w/a mandolin)
¾ lb. whole wheat orzo pasta
1 c. fresh sliced dill
olive oil
1 c. minced scallions
¾ lb. feta
2 lbs. cooked shrimp

Directions:
  1. Bring pot of water to boil, add 1 tsp. salt. Simmer orzo for 9-11 minutes.
  2. In a small bowl, whisk together lemon juice, ½ c. olive oil, 2 tsp. salt and 1 tsp. pepper.
  3. Pour over hot pasta.
  4. Add shrimp to orzo
  5. Add scallions, 2 tsp. salt, cucumber, parsley, red onion, dill, and 1 tsp. pepper.
  6. Toss well, add feta.


Fruit Trifle....
When entertaining, the key is "presentation." A simple fruit salad can instantly turn gourmet just by the way you arrange the fruit! Choose a variety of colors, use your creativity, and wha-la!
